Pursuing his paternal Indian heritage, Executive Chef Adam D’Sylva is joined by Michael Smith, formally Head Chef of Jacques Reymond. The trio is completed by Mumbai born Sous Chef Ved Navghare, formally of Coda, and together they bring the flavours of Tonka to life with the help of two tandoor ovens and a team of experienced chefs. They have devised tantalising dishes that explore Indian techniques and flavors although not being restricted by tradition. D’Sylva stamps his characteristic approach to cooking with the balance and freshness of Asian. The menu is designed with a passion for enhancing seasonal, fresh ingredients in modern and accessible way.

Just as Coda’s Wine List of the Year offers something uncomplicated and interesting, so too will diners discover at Tonka. The wine list is “less France, more Italy” with India kept top of mind in its design.
Travis, one of the country’s best sommeliers and the reigning Good Food Guide Sommelier of the Year, leads a passionate wine team who promote the interesting and accessible wine list. Travis and his team are always on hand to share their knowledge in a typical non-pretentious Tonka style.
The name, Tonka, pays homage to the building which was the former home of the iconic Melbourne nightclub, Honky Tonks. The blue city of Jodhpur inspired Tonka’s aesthetic concept with splashes of Jaipur’s pink. Art adorned ceilings are the hero of the space, these installations by Melbourne artist Naomi Troski capture the design brief: ‘the magic of India.’
Tonka embraces two quintessential Melbourne perspectives. Firstly, its famous laneway culture which informs the casual Tonka Bar where cocktails and tastes form the Tandoor are offered in a relaxed non-reservation area. The second aspect begins with a walk through the ‘kitchen dry store,’ which leads to the dining room, Tonka. Book a table and enjoy the bright, open room with sweeping views of the Yarra River, MCG and Arts Precinct.
